At Lalesa in Gedeb (est. 2023 by Ephtah), ripe cherries rest on raised beds for a day to concentrate sugars, are pulped, then dry on covered beds for 14–18 days in a Red Honey process. Grown at 2,150–2,200 masl from heirloom varieties, the cup is fruit-led: cantaloupe and mandarin peach over a gentle milk chocolate baseline, with a clean finish acidity. The station also invests in the local community, including initiatives that support women’s education, financial literacy, and leadership.
