- The coffee beans are moistened with water and EA is circulated throughout.
- During this process, ethyl acetate interacts with the caffeine within the coffee bean, extracting the caffeine while preserving the majority of the flavour compounds.
- Once the desired caffeine level is achieved, the beans undergo a steaming process to eliminate any remaining residue of ethyl acetate.
- Natural EA is obtained from the sugar cane industry around Palmira, Colombia and is, together with spring water, the only other substance the coffee gets in contact with.
